DESCRIPTION

The extra virgin olive oil ATHLOS, produced in the area of Archanes, with an acidity of less than 0.80 lines. It has a strong fruity taste and aroma of freshly picked olives. When it is of recent production, it may show a slight bitterness and a short burning sensation (a few seconds) in the esophagus, something that experts taste as a qualification, since it also shows the freshness of the product.

Acidity is one of the main criterion for quality evaluation of olive oil. It is expressed in grams of free oleic acid per 100 grams of fat. Therefore, when a label indicates, for example, an acidity of 0.5% (or 5 lines according to the producer) it means that 100 grams of olive oil contains 0.5 grams of free fatty acids. The limit for the designation as EXTRA VIRGIN OLIVE OIL is: acidity  <0.80 (or 8 lines for the producer).
