The Extra Virgin Olive Oil 1Lt

Acidity is one of the main criterion for quality evaluation of olive oil. It is expressed in grams of free oleic acid per 100 grams of fat. Therefore, when a label indicates, for example, an acidity of 0.5% (or 5 lines according to the producer) it means that 100 grams of olive oil contains 0.5 grams of free fatty acids. The limit for the designation as EXTRA VIRGIN OLIVE OIL is: acidity  <0.80 (or 8 lines for the producer).
